This first crack recipe really delivered!! Jackfruit is no joke – this sandwich was satisfying AF. Here’s how we did it:
Ingredient list
1 yellow onion, diced
3 cloves garlic, minced
1 Tbsp olive oil
1/4 tsp smoked paprika
1/4 tsp cumin
1/4 tsp chili powder
1Tbsp liquid smoke
1 can young jackfruit in brine or water (not syrup)
1/4 cup vegetable broth
2 Tbsp dijon mustard
1Tbsp Worcestershire
2-? Tbsp BBQ sauce – because you’re the BBQ sauce boss
Heat up your frying pan and olive oil and sautee the onion and garlic for a few minutes. Then add in the paprika, cumin, and chili powder and give it a few minutes to get hot and fragrant then add the liquid smoke. Prepare the jackfruit by first rinsing and then removing the hardcore and seeds. Shred the jackfruit pieces with your fingers or a fork and it to your pan. Then put in your veggie broth, mustard, Worcestershire, and BBQ sauce and stir to combine. Let this all cook together for 5 minutes and give it a taste. Want more mustard?! You go for it.
Topped off with fresh coleslaw, dill pickles, punchy cilantro and zesty lime – let me just say, there won’t be any leftovers. This was enough for two heaping sandwiches for Amy and me – so if you have more people, double, triple, or quadruple as needed! This would be a great recipe to prepare ahead of time for a big group 🙂 Get saucy.
