Boring ole meatloaf? Not today! Chef Caleb shows off his barbecue meatloaf using the Where’s the Beef Seasoning.
Barbecue Meatloaf

8 oz. smokey bacon, diced
1 onion, diced
1 red bell pepper, diced
1 Tbsp. Where’s the Beef Seasoning(https://colonelde.com/shop/blends/bbq/where-s-the-beef/)
1 tsp. smoked paprika
1 tsp. garlic granules
1 tsp. yellow mustard, ground
½ tsp. celery seed, ground
2 tsp. bacon fat or other
2 Tbsp. tomato paste
1 Tbsp. Worcestershire sauce
¼ cup water or stock
1 lb. ground beef
1 egg
1/3 cup bread crumbs
2 tsp. kosher salt
Black pepper
1 Tbsp. barbecue sauce or ketchup

1. In a skillet over “medium heat,” brown the bacon. Preheat oven to 350*F.
2. Strain out bacon once browned. Add onion and bell pepper to skillet. Caramelize, lowering heat if needed.
3. Add Where’s the Beef Seasoning, paprika, garlic, mustard, and celery seed. Roast over “medium” heat about 2 minutes, stirring.
4. Add tomato paste and cook about 5 minutes, stirring occasionally.
5. Deglaze the pan with Worcestershire sauce and water. Stir briefly, scraping the bottom clean and transfer contents to a plate to cool for several minutes.
6. Grease a loaf pan with bacon fat or other fat.
7. Add the egg, bread crumbs, bacon, kosher salt, black pepper, and 1 tablespoon barbecue sauce to a large mixing bowl with the beef. Add caramelized mix and mix thoroughly.
8. Transfer contents of bowl to loaf pan, spreading evenly and tamping down. Bake about 60 minutes or meatloaf reaches an internal temperature of 155*F. Glaze top of meatloaf during last 15 minutes of cooking with barbecue sauce or ketchup.
