Ingredients:
Seasonings/Marinade
– 4 chicken breasts
– 1/8 tsp black pepper
– 1/4 cup stock
– 1 tsp salt
– 1/2 tsp paprika
– 1 tsp garlic powder
– 1 tsp cumin
– 1 tbsp Italian seasoning
– 2 tsp sugar
– 1/4 cup melted butter
Sauce
– 1/4 cup lemon juice
– 1 tbsp chicken powder
– 1 pint heavy cream
– salt and pepper to taste
– 1/2 tbsp dried parsley
Side Vegetables
– 1 cup cherry tomatoes
– 4 to 5 red potatoes, cubed
– 1/8 tsp paprika
– 1/8 tsp black pepper
– 1/8 tsp salt
– 1 tsp olive oil
Procedure:
Step 1.
Wash the chicken and pat dry with a paper towel.
Step 2.
Combine the black pepper, salt, garlic powder, cumin, Italian seasoning, sugar, paprika, and melted butter together.
Step 3.
Apply the mixture to the chicken and allow to marinate for 30 minutes.
Step 4.
In a bowl, season the cherry tomatoes and potatoes together with the paprika, black pepper, salt, and olive oil. Set aside.
Step 5.
Preheat the oven to 450 degrees. Put the chicken onto a baking sheet, and then arrange the tomatoes and potatoes around the chicken. Pour in 1/4 cup of stock, cover the baking sheet with foil, and bake for 35 to 40 minutes.
Step 6.
For the sauce, combine lemon juice and heavy cream in a saucepan and bring to a simmer. Season with the chicken powder, salt, and pepper. Then, simmer for another 3 to 4 minutes. Parsley goes in before removing the saucepan from the heat.
Step 7.
Plate the chicken, tomatoes, and potatoes; top with the lemon sauce; and serve.
