A great way to use ripe avocados and make a tasty versatile condiment suitable for all kinds of different applications. It’s super easy to throw together this hollandaise with 5 ingredients, a blender and 10 minutes.
Serves: 6-8 | Prep time: 10 mins
INGREDIENTS
1 ripe avocado
2 Tbsp fresh lemon juice
¼ tsp paprika
120g butter, melted and hot
METHOD
1. Blitz avocado, egg yolks, lemon juice and paprika with a hand blender or in a blender until smooth.
2. Gradually add in the butter with the motor running until thick and creamy.
3. Season to taste with salt and pepper.
4 Serve.
Top tip: Serve your avocado hollandaise on an eggs benedict, toast or over fries or grilled seasonal vegetables.
