Ingredients:
Salmon
6 cups of cooked brown or white rice
1/4 Calabaza pumpkin
1 15.5 Oz can of white beans or cannellini beans (rinse beans with water. Add 1/2 cup of water to a medium saucepan and boil beans for approx. 3 to 4 mins. then drain and set aside.)
1 green onion, chopped
1/2 cup of yellow bell pepper, chopped
3/4 cup of fresh cilantro, chopped
3 slices of a small yellow onion, chopped
Avocado oil
Avocado spray or pam
One handful of fresh green beans
Seasonings
Salmon
1 Tbsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp parsley
1 tsp dried rosemary
Pilaf
1/2 Tbsp black pepper
1 Tbsp chili powder
1 Tbsp onion powder
1 Tbsp adobo seasoning
1/2 Tbsp cumin
1 Tbsp cayenne pepper, optional
1/2 Dried parsley flakes
Pumpkin
1 tsp onion powder
1 tsp paprika
2 tsp salt
Green beans
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley flakes
Directions:
Pumpkin
Preheat oven to 400 degrees
Place pumpkin on foil or baking sheet, spray pumpkin with pam or avocado spray then add seasonings and bake for 2 hrs. or until tender. Set aside.
Pilaf
Using a large skillet heat 2 Tbsp of avocado oil, add onions and bell pepper sauté for 30 seconds. Lower the heat and add beans, cilantro, and green onion sauté for 1 min. then stir in seasonings. Cut pumpkin into small chunks, add pumpkin in skillet then add rice. Mix all ingredients together and remove from heat.
Salmon
Preheat oven to 400 degrees.
Place salmon on foil or baking sheet, spray salmon with pam or avocado oil and add seasonings. Bake for 15 to 20 mins.
Green beans
Do the same for the green beans. Spray green beans with oil and add seasonings. Bake for 20 mins at 400 degrees.
