Amazing & Quick Middle Eastern Stew (Vegan)

Recipe:
Ingredients:
– 2 cans tomatoes
– 1 tbsp tomato puree
– 5 cloves (or more) garlic
– 1 onion (red or yellow)
– 1 aubergine
– 1 zucchini
– 2 bell peppers
– 1 large bunch fresh flat leaf parsley
– 1 tbsp paprika
– 1 tbsp cumin
– Salt
– Pepper
– Olive oil, for frying
– 3-5dl water

– Couscous

Instructions:
Rinse and chop all the fresh ingredients. Boil a kettle of water. Add the couscous to a pot or bowl. Add salt (or other seasoning) and cover the couscous with hot water. Cover with a lid for 5-10 minutes. Heat a large pot on the stove. Add olive oil. Add onions and garlic and fry for 3 minutes. Add aubergine, zucchini and bell peppers and fry for another 3 minutes. Add canned tomatoes, tomato puree, spices and water and bring to a boil. Cover with a lid and let cook for 10-15 minutes. Add the parsley and let it cook for another 5 minutes. Taste and adjust the seasoning if needed. If the stew is too dry, add some water. If itโ€™s too wet, let it cook for another couple of minutes without the lid. Serve with couscous, salad and hummus. Enjoy!
