Recipe:
Ingredients:
– 2 cans tomatoes
– 1 tbsp tomato puree
– 5 cloves (or more) garlic
– 1 onion (red or yellow)
– 1 aubergine
– 1 zucchini
– 2 bell peppers
– 1 large bunch fresh flat leaf parsley
– 1 tbsp paprika
– 1 tbsp cumin
– Salt
– Pepper
– Olive oil, for frying
– 3-5dl water
– Couscous
Instructions:
Rinse and chop all the fresh ingredients. Boil a kettle of water. Add the couscous to a pot or bowl. Add salt (or other seasoning) and cover the couscous with hot water. Cover with a lid for 5-10 minutes. Heat a large pot on the stove. Add olive oil. Add onions and garlic and fry for 3 minutes. Add aubergine, zucchini and bell peppers and fry for another 3 minutes. Add canned tomatoes, tomato puree, spices and water and bring to a boil. Cover with a lid and let cook for 10-15 minutes. Add the parsley and let it cook for another 5 minutes. Taste and adjust the seasoning if needed. If the stew is too dry, add some water. If it’s too wet, let it cook for another couple of minutes without the lid. Serve with couscous, salad and hummus. Enjoy!
