Super easy to make these bacon-y potato cheddar bombs in the air fryer – and it’s all vegan and gluten free!

Air Fryer Bacon Bombs (Vegan!)

Ingredients:
Rice paper sheets
5 potatoes – peeled, washed, diced
Plant milk to make mashed potatoes
Vegan cheddar cheese
3 tbsp oil
2 tbsp tamari or soy sauce
2 tbsp of maple syrup
1 tsp garlic powder
½ tsp smoked paprika
½ tsp liquid smoke
Black pepper to taste
¼ cup nutritional yeast

Directions:
First make the mashed potatoes – add cubed potatoes to pot of water and boil to cook until fork tender. Then drain, rinse and put back in pot and add some non flavoured, unsweetened plant milk of choice. Mash by hand with a masher or use mixer until smooth.
Let potatoes cool.
Add all bacon sauce ingredients to a bowl.
Take 1 or 2 rice paper sheets and thoroughly wet them in water. One sheet works fine for each bomb, but 2 sheets makes them extra crispy.
Now grab a golf ball size amount of mashed potatoes. Flatten it in your hand, and add some vegan cheese, then roll up the ball again so cheese is in the middle. Add more potato if you need.
Add ball of potato in centre of wet rice paper, and wrap up gently.
Brush the bottom of the bombs with bacon sauce, then add in air fryer tray, and brush the top and sides.
Do not overcrowd the air fryer tray, and don’t let them touch.
Air Fry at 390F for 8-10 minutes, depending on how crispy you want them.
Let cool down a few minutes before biting into them, as they will be extremely hot. Serve with ranch dressing.
