A Bowl of Shakshuka Feels Like a Warm Hug

My favorite comforting breakfast to eat is Shakshuka. I wanted to add some greens and extra proteins with cannelini beans! Try my Shakshuka with Kale and Cannelini Beans.

1 tbsp oil
1/2 onion, diced
3-4 cloves garlic, minced
1 tsp Smoked Paprika
Salt & Pepper
1 15oz can fire roasted tomatoes
1 15oz can Cannelini beans
3-4 handfuls Kale
Eggs (2 per person)
Your favorite toast, or toasted pita

Add about 1tbsp oil to a skillet and add in diced white onion. Cook for about 2 minutes, then add in minced garlic, cooking until fragrant. Add in paprika, salt, and pepper. Add the can of fire roasted tomatoes, breaking up tomatoes if needed, and let it simmer for about 5-10 minutes. Add in the kale and stir to cover with the tomatoes, allowing the kale to wilt. Add in cannelini beans and cook for 2-3 more minutes. Make wells in the sauce and add in eggs (2-3 per person). Cover and cook until the whites of the eggs are set. Add feta and fresh parsley on top, serve with toast, and enjoy!
