Stuffed eggplants: a fun idea to surprise your guests!

Every day is a good day to find a new way to cook eggplant, so here’s a recipe to fall in love with!INGREDIENTS
• 3 eggplants
• 500g ground-meat
• 2 tbsp flour
• 1 onion
• 1 egg
• 1 clove garlic
• ½ tsp paprika
• Salt
• Black pepper
• Oil
 
• 700g boiled potatoes
• 1 carrot
• 2 tbsp butter
• Salt
• pepper
 
• 2 tomatoes
• Hot green pepper
 
METHOD

Chop eggplant. Put in salted water. Cook the ground meat. Stuff the eggplant. Deep-fry.
Cook mashed potatoes and put in a mold. Put eggplant on top. Garnish with tomatoes and peppers. Bake for 20 minutes at 180 ° C / 350 ° F.
