INGREDIENTS:
2 cup Chickpeas
1/2 cup cooking liquid of chickpeas
1/2 cup raw tahini
1/2 lemon
1/2 teaspoon kosher salt
1 garlic clove chopped
INSTRUCTIONS:
1. Soak the chickpeas in a bowl with water for 9-12 hours. It is advisable to change water twice during soaking.
2. Cook the chickpeas in a pot with hot water for 1 hour – 1 1/2 hour, until softened. Once the grains are soft you can stop cooking.
3. Cool the chickpeas completely. (Do not throw away the cooking water. We will need them to make the chickpeas).
4. Add 2 cups of chickpeas and a bit of the cooking liquid into the food processor (we will add more if necessary at the second time).
5. Turn on the food processor for two minutes.
6. Now add the rest of the cooking liquid, raw tahini, lemon, garlic and salt. (You can add lemon and salt in two rounds so that it does not come out too sour or salty. You can always add more seasoning so it is better not to put the whole amount of salt and lemon for the first time).
7. Taste and add more spices if necessary.
8. Transfer to a plate and sprinkle over toppings you like. My topping: olive oil, chickpeas, red paprika and parsley.
COMMENTS/ UPGRADES:
• I soak 500 grams of chickpeas in a bowl and cook them. To make the Hummus I only need 2 cups of the chickpeas which is about 1/3 of the amount so I freeze the rest in portions. Next time I want to make Hummus I just take it out of the freezer and make it on the spot without the need for soaking and cooking.
• Store the Hummus in the refrigerator in a box for 2-4 days.
