How to make a spicy noodle soup/Vegan laksa recipe

I show you my vegan laksa recipe/how to make a spicy noodle soup that is bursting with fresh and fantastic ingredients.
Ingredient recap and chilli paste recipes are as follows
LAKSA
1 recipe Laksa paste (see below)
1 tbsp coconut oil
263g baby corn (1/2 lb)
240g mushrooms (1/2 lb)
175g broccoli (2 1/4 cups)
175g green beans (2 1/4 cups)
3 large kaffir lime leaves (use zest of 1 lime to substitute)
2 tbsps light soy sauce
2 tbsps palm sugar
1 tbsp agave
2 cans coconut milk (400mls or 13.5oz)
550mls/1 pint vegetable stock (ingredients below)

LAKSA PASTE
1 large shallot
5cm/2” galangal or ginger
5cm/2” fresh turmeric (substitute 2tsps powder if needed)
3 tsps chilli paste ( recipe below) (substitute jarred chilli sauce or 5 long fresh red chillies)
2tsps miso paste
2 large cloves garlic
2 tsps paprika
1/2 tsp ground cumin
1/2 tsp ground coriander
15 peanuts
3 tsps sesame oil
2 stalks lemongrass (5” or 13cm each)

CHILLI PASTE
20g dried red chillies (I used 15g birds eye and 5g rocoto, use whatever you have available) (0.7oz)
2tbsps palm sugar
1 tbsp agave
13cm/5” piece lemongrass
2tbsps soy sauce
1 1/2 tbsps tamarind paste
1 thumb galangal/ginger
6 large cloves garlic
8 fresh chillies
4 tbsps oil

Soak dried chillies in water for a few minutes then blend with fresh chillies, garlic, galangal/ginger, lemongrass, and oil. Then sauté for a few minutes with soy sauce, palm sugar and tamarind paste.
This stores well in the fridge in jars or you may freeze for longer period of time

VEGETABLE STOCK
1 large onion
1 large leek
2 large carrots
4 stalks celery,
4 large cloves garlic,
100g dried mushrooms
salt to taste
1 tbsp black peppercorns
1 tbsp coriander seeds
5 sprigs fresh thyme
5 sprigs fresh parsley
2 sheets seaweed
4 dried bay leaves
Water to cover vegetables

Strain after simmering for an hour. This will keep in the fridge for a few days. Use it for soups, stews etc. You may also freeze it in ice cube trays
