The base for these tacos is jackfruit, which is a popular meat alternative among vegans and vegetarians. It is native to Southeast Asia and has a slightly sweet taste. It can be bought canned at almost every supermarket. You just have to rinse it and it’s ready to cook! I like to pull the pieces apart to give it a meatier texture but you could also cut it into small pieces. For this recipe, you can prepare everything in one pan so there is almost no clean up required afterwards! In this video, I use a store-bought taco seasoning but you can also make your own! Just mix together in equal parts: paprika, chili powder, cumin and oregano. This recipe would also work in burritos or bowls.

1 onion
2 cloves of garlic
1 can of jackfruit
1/2 cup corn
1/2 cup beans
1 tbsp taco seasoning
salt and pepper to taste
1 cup vegetable broth
1/3 cup BBQ sauce
and whatever toppings you like, I use:
lettuce, avocado, salsa, vegan mayo, lime juice and Cholula hot sauce

Drain and rinse the jackfruit, then pull the pieces apart until it resembles pulled pork. Also, rinse and drain your corn and beans if you use canned ones. Otherwise soak and cook your beans according to package instructions. Chop your garlic and onion. In a large pan heat up some vegetable oil. Fry the onion for a few minutes, then add the garlic. Let it fry for another minute then add the beans, corn and jackfruit. Add your seasoning. Fry everything for another minute, then add the vegetable broth and simmer until the jackfruit has softened. You might need to add more broth from time to time. When no or very little liquid remains add the BBQ sauce and mix everything together. Heat up your tortillas and serve with avocado (or guacamole), some lettuce, coriander (optional), lime juice and hot sauce! I also like to add vegan mayo or vegan cheese. Enjoy!
