Honey chilli cauliflower (Vegan/Yummy Vegetarian / Snack)

Best served with – Fried rice, Steamed jasmine rice and noodles
Ingredients:
Ginger garlic paste: 1teaspoon Salt: 1 teaspoon
Crushed black pepper: ½ tablespoon
Soya sauce: 1 teaspoon
White vinegar: 1 tablespoon
Cauliflower cut into small florets: 500 gms
Corn flour: 150gms
Oil for frying
Peanuts or cashew nuts: 100gms
Dried red chillies (cut, seeds removed): 5 pcs ( 20 gms )
Fennel seeds (saunf): 1 teaspoon
Star anise: 1 pc
Garlic Chopped: 6-7 cloves ( 40 gms )
Ginger Chopped: 30 gms
Onions diced (2 medium onion ): 150gms
Green capsicum (2 medium sizes): 150gms
Red chillies fresh ( optional ): 20gms
Black pepper crushed: 1 teaspoon
Sugar:1 tablespoon
Soya sauce light: 1/3 cup
Honey: ½ cup
Vegetable stock or water: ½ cup
Corn flour: 1 tablespoon
Sesame seeds: 1 teaspoon
Spring onions cut: 80 gms
Process:
• Cut the cauliflower to even-sized florets.
• Mix in the ginger garlic paste, salt, crushed pepper, soya sauce, vinegar and marinate the cauliflower florets in it. Drain and dust with cornflour.
• Deep fry in oil till golden brown. drain excess oil off and keep aside
• Deep fry the peanuts or cashew nuts in the same oil.Drain excess oil off and keep aside
• In a wok, heat some oil and add the deseeded dry red chilli flakes, fennel seeds and star anise to it. Add chopped garlic and cook till golden brown.
• Add the ginger and onions and cook for 2 minutes. Add the diced capsicum and fresh red chillies (optional) and continue stirring and cooking for 30 seconds.
• Add the crushed pepper, sugar, soya sauce and honey and cook for 30 seconds so that the honey caramelizes. pour in half a cup of stock or water and allow to boil.
• In a bowl, mix the cornflour in cold water to form a slurry. Add this to the boiling mixture and stir vigorously till a thick mixture is formed.
• Add the fried cauliflower, peanuts and toss it till the coating forms on the outside. Add sesame seeds and cut spring onions. Toss
• Serve hot garnished with sesame seeds and spring onions
Tips :
• Use enough cornflour to dust the marinated cauliflower so that we get a crisp coating.
• Use dried Kashmiri chillies or paprika for the best result as this can actually be eaten with the dish.
