Easy vegan smoked cheddar cheese (shreddable,meltable dairy free).
Today we are making an easy vegan, meltable, shreddable, smoked cheddar block. It is dairy, gluten and oil free and is the quickest method to make a delicious plant based cheese.

Yields: 10-15 slices
Prep time: 10 minutes Set time: 3 Hours
4 cups raw cashews, soaked overnight in
¼ cups Apple cider vinegar
5 cups water (for soaking)
(nut free option, sub 2 cups pumpkin or 4 cups sunflower seeds)
3 tbsp white miso
3 tbsp nutritional yeast
1 1/2 teaspoon mild French mustard
1 tsp garlic salt
1/4 cup water
2 tsp smoked paprika
2 tsp liquid smoke
2 tBsp tapioca starch
2 tbsp agar agar powder
Protip
*If your cheese is too soft or jello-like, your agar agar is not strong enough. Increase the agar agar next time you make it or add a tiny bit of water and remelt it. Add more agar agar and boil it for an additional 6 minutes.
*Keep in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.
*Use whatever shape that you wish for a cheese mold – glass or ceramic work best.
