This easy and delicious ZUCCHINI BOAT ENCHILADAS are a great way to use up those summertime squash. Love the Tex Mex flavor and all the textures. RECIPE BELOW. Enjoy.

How to Make Zucchini Boat Enchiladas Recipe

INGREDIENTS:
1 very large or several small zucchini cut in half and cored
1 1/2 pound ground beef
1 cup finely diced onions
1 cup finely diced bell peppers – I used red and yellow
1 small can green chilies
1/4 cup salsa
3 tbsp. enchilada sauce plus 1 cup
1 tbsp. minced garlic
1 tsp. chili powder
2 tsp. paprika
1/2 tsp. oregano
1 tsp. cumin
salt and black pepper
8 oz. grated cheese – I used Monterey Jack

Clean, halve and core zucchini.

In a skillet on medium high heat add ground beef, cook and stir until no
longer pink and drain excess fat.

Add onions, bell peppers, salt and black pepper. Cook and stir for 3-4 minutes.
Add minced garlic and green chilies. Cook and stir for 1 minute.

Add salsa, 3 tbsp. of enchilada sauce and seasonings. Cook and stir for 2-3 minutes

fill the zucchini boats full and tamp down lightly.
Spoon over a couple tbsp. enchilada sauce. Cover.

Bake at 400 degrees Farenheit for 30-50 minutes or until fork/knife tender.
Mine took 50 minutes all together.

Top with rest of enchilada sauce and grated cheese.
Bake another 5-10 minutes until cheese is melted.
