Instant Pot Creamy Corn Chowder

An easy and delicious corn chowder made in the Instant Pot! We savor the taste of summer every time I make this.

Ingredients:
½ cup of butter
1 Onion finely chopped
1 -2 garlic cloves chopped
1 red bell pepper (or Hungarian Pepper) chopped
1 Jalapeno pepper, minced
½ cup AP flour
5 cups vegetable or chicken stock
6 corn cobs with the corn cut off, broken in half
Corn from 8 cobs of corn
2 medium Russet or Yukon Gold potatoes peeled and cut int medium dice
2 cups cream or ½ and ½
Salt and Pepper to taste
Smoked Paprika to taste
Several sprigs of thyme
6 slices of bacon cooked and crumbled.

Use the sauté feature and sauté the onion, garlic and peppers in the butter till the onions are translucent. Stir in the flour. Add the stock and corn cobs. Cook on the soup function for 20 minutes. Do a natural release.

Remove the corn cobs, add the corn kernels, potatoes, cream thyme, salt and pepper and put the lid back on cook on the soup function for another 20 minutes.

Serve with crumbled bacon. I also add fresh herbs.
