We’re sharing two easy recipes to inspire your next afternoon snack for Chickpea Mash and Chunky Guacamole. Don’t have all the ingredients? You can adjust the ingredient lists based on what you have in your fridge and pantry.
CHICKPEA MASH
Ingredients:
– Chickpeas
– Fennel
– Celery
– Dill
– Lemon Juice
– Apple cider vinegar
– Olive oil
– Dijon mustard
– Chili flakes
– Shallots
– Salt and pepper to taste
Directions:
1. Strain and rinse chickpeas, then add into a medium size bowl.
2. Add lemon juice, olive oil, apple cider vinegar and dijon mustard to bowl.
3. Mince shallot and add to bowl.
4. Using a fork, mash chickpeas to desired consistency, leaving some whole chickpeas intact. Alternatively, you can pulse in a food processor.
5. Add fennel, celery, dill, chilli flakes and salt and pepper to taste.
6. Enjoy on toast, crackers, in a wrap, sandwich, bowl or by itself!
CHUNKY GUACAMOLE
Ingredients:
– Avocado
– Lemon juice
– Tomatoes
– Onion
– Jalapeño
– Cilantro
– Salt and pepper to taste
Directions:
1. Cut avocado, remove pit and skin, then place in medium bowl.
2. Add lemon juice.
3. Mince onion into small pieces. Chop tomatoes and cut up jalapeño. Note: the seeds are the spicy part of a jalapeño, choose how many to include based on spice preference!
4. Lightly mash avocado with a fork.
5. Add onion, tomatoes and jalapeño into the avocado and stir.
6. Add salt and pepper, and (optional) smoked paprika to taste.
7. Enjoy on toast, with chips, crackers, bowls, sandwiches, burgers or by itself!
