Temp:200° c – 390° f
Ingredients:
250 ml rice milk
1 tbsp lemon juice
60 ml olive oil
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tbsp smoked paprika
300 g Doves Farm gluten free plain flour
4 tbsp ground flaxseed mixed with 6 tbsp of water
zest of 1 lemon
Step 1: Prepare The Mixture
Place the ground flax seed and 6 tbsp of water in a small bowl and stir together until combined. Place the rice milk, lemon juice, flax mixture and olive oil into a large mixing bowl and gently whisk together. Sift in the flour, baking powder, smoked paprika and bicarbonate of soda, then add the lemon zest and a pinch of sea salt and fold into the mixture with a metal spoon until evenly combined.
Step 2: Bake
Spoon the muffin mixture into the cases in a muffin tray, filling them two thirds full, and bake in the oven for about 45 minutes until slightly risen and golden.
