MUSHROOM CHICKEN
This recipe is virtually effortless yet very flavorful, so give it a try for your next meal prep or weeknight dinner! Don’t forget to like and share!
Serves 4
Ingredients:
🔹4 thin boneless skinless chicken breasts
🔹1 tsp onion powder
🔹1/2 tsp dried oregano
🔹1/2 tsp paprika
🔹salt & pepper to taste
🔹1 1/2 Tbsp olive oil, divided (1 Tbsp for the chicken & 1/2 Tbsp for the mushrooms)
🔹8 oz. white mushrooms, sliced
🔹2 Tbsp butter
🔹3 garlic cloves, minced
🔹parsley to garnish
Directions:
1️⃣ Pat chicken dry with a paper towel. In a large bowl, add chicken breasts, onion powder, oregano, paprika, salt, & pepper. Mix well to coat all of the chicken breasts with the seasoning.
2️⃣ In a large skillet, heat 1 Tbsp olive oil over medium-high heat. Cook chicken breasts in skillet until internal temperature reaches 165 degrees F (about 5 minutes per side depending on how thick the breasts are). Once the chicken is done, remove the breasts from the skillet, set them aside, & cover them with aluminum foil to keep them warm.
3️⃣ In the same skillet, add 1/2 Tbsp olive oil, mushrooms, salt, & pepper. Cook about 5 minutes, stirring occasionally.
4️⃣ Add the butter & garlic and sauté for about 1 minute.
5️⃣ Add chicken breasts back to the skillet & garnish with parsley. Serve with rice or cauliflower rice & enjoy!
