Creamy Red Chicken Curry
Ingredients:
1 whole chicken
5pcs garlic cloves finely minced
1 tbsp grated ginger
1 medium size onion
1 can coconut milk
1 can crushed tomatoes
2 tbsp sugar
4 pcs bay leaves
1 pc chicken cubes
600g medium size butternut squash cubed
4oz green beans
1 red bell pepper
1 tbsp each (cumin, cilantro, coriander, madras)
2oz curry leaves
1 tsp cayenne pepper (you can remove this if you dont like it spicy)
1 tbsp paprika
3 tbsp worcestershire
2 tsp salt
2 green chillies
1 tbsp ginisa mix
Instructions:
1. Seasoned cut chicken with worcestershire and pepper mix then set aside
2. In a nonskillet pan heat oil on a medium high, saute garlic, onions, and ginger for 2 mins.
3. Add chicken let it cook for 5-10 mins
4. Add ginisa mix, chicken cubes, and all the dried ingredients, bay leaves, Stirring occasionaly, then cover and let it simmer for 5 mins.
5. Add squash, coconut milk, crushed tomatoes, sugar, stir, cover and let it simmer for 10 mins
6. Add string beans, bell peppers and chillies, stir
7. Add salt, curry leaves, let it cook for another 5 mins
