Thyme – 1 tsp
Fresh Parsley – hand full
Lemon juice – 3 tbsp
Cooking oil – 4 tbsp
Chicken thighs – 1kg
Potatoes – 400g ( cut into bite size)
Salt – 1 tsp
Black pepper – 1 tsp
Sprinkle of oil
Fresh Parsley
Preheat oven to 200°C and cook for 30 minutes, flip chicken, and continue cooking for 15 minutes.
