Peach Cider Glazed Chicken Thighs (serves 2)
– 2 chicken thighs
– 4 tbsp @freshpressfarms peach cider vinegar
– 2 tbsp hot honey
– 3 tbsp paprika
– 1 tbsp black pepper
– 2/3 tsp salt
1. Mix paprika, salt, and pepper to make a seasoning blend for your chicken (or use whatever blend you like)
2. Coat chicken on both sides and add to skillet over medium heat, sprayed lightly with oil or cooking spray.
3. As chicken cooks on first side, make peach cider glaze by whisking the peach cider vinegar and hot honey together.
4. Flip chicken when bottom is starting to brown, after 5 minutes or so. Cover and continue to cook, flipping if needed, until internal temp at thickest part reads 165F or higher (or there is no pink when thickest part is cut).
6. For last 2-3 minutes of cooking, add a drizzle of glaze and cover with lid.
7. Plate chicken with meal and add more glaze over top.
