Look, it’s the time of year where everyone makes New Years eat healthy work out type resolutions and if you’re looking to be a slim-thicc skinny legend in 2025 then you’re gonna need to snack like a champion with this homemade roasted red pepper hummus and wheat pita chips.

Pita Chips ingredients:

3 cups Wheat Flour
1 cup lukewarm water
1 teaspoon sugar or honey
2 tsps Instant Yeast
1 tablespoon of vital wheat gluten
Splash of lemon
1 tbsp Salt
2 tbsps Olive Oil

Steps
1. Mix 1 cup of lukewarm water, sugar, 2 tsps of yeast, and vital wheat gluten in a large bowl. Let rest for 15 minutes until foamy.
2. Add 3 cups of wheat flour and lemon juice, mixing together.
3. Add 1 tbsp of salt and 2 tbsps of Olive oil, and mix together until combined.
4. Cover with a damp cloth until dough is doubled in size (usually around 1 hour).
5. Punch the dough down and divide it into 8-12 evenly sized portions. Ball the portions up, and cover with a damp cloth for another hour or so.
6. Preheat your oven as hot as it can go with a cast iron pan or pizza stone inside.
7. Dust a work surface with flour and roll out each portion of pita.
8. Place one at a time into the oven directly on the stone or cast iron, and cook for 1-2 minutes, until it puffs up. Flip, cook for one more minute, and remove from the oven, placing them in a clean towel or aluminum foil to cool, slightly.
9. Remove the stone/cast iron from the oven and bring the oven temp down to 300F.
10. Chop the pitas into quarters and place on a baking tray. Optionally drizzle with olive oil and lightly salt.
11. Bake for 30 or so minutes until the chips start to dry out, then turn the oven heat off, crack open the door for another 20 to 30 minutes, and leave them in to dry out. Let cool completely and they should be crispy and delicious.

Hummus Recipe:

2 red bell peppers
1 (15-ounce) can chickpeas
1/4 cup fresh lemon juice
1/4 cup tahini
1 bulb of garlic
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
2 to 3 tablespoons water
Salt to taste

Steps:

1. Preheat the oven to 350F.
2. Prepare your red peppers by cutting them into manageable sections, drizzling with olive oil, and lightly salting.
3. Chop the top of the garlic off and drizzle that, still in the skin.
4. Place the peppers and garlic onto a baking sheet and roast in the oven until a nice char forms and the garlic is golden brown (may happen earlier).
5. In a food processor, blend together the chickpeas, tahini, cumin, lemon juice, garlic, and the peppers. Add water to keep things moving, a little bit at a time. It should be fairly smooth when ready for the last step.
6. With the processor on low, slowly drizzle in the olive oil until fully combined and smooth. Salt to taste.
7. Serve with pita chips and fresh veggies, and top with a little sprinkled smoked paprika for extra kick!
