COOKING YUKON GOLD POTATOES
Ingredients
1 large onion diced
1 large clove garlic sliced
1 diced tomatoes
3 table spoons parmesan cheese
3 tablespoons fresh parsley
1/2 teaspoon paprika
salt and pepper to taste
Peel and slice 4 large yukon gold potatoes and set aside, Place 2-3 tablespoons of olive oil in pan, cook at medium heat, add diced onions and cook for 1 minute, add 1 sliced garlic clove, add potatoes, and tomatoes and cover, cook for 5-8 minutes until golden brown, this enhances the flavor and texture (if potatoes stick to bottom of pan, add 2-3 tablespoons water)
After potatoes are tender, add parmesan cheese and chopped parsley. Season generously with salt and pepper.
