One of my favorite things to do as a chef has been to take traditional comfort food dishes, use some refined technique and ingredients, and create a fine dining version of the classic.
This time it is a comfort food of my people; Paprikash! I’m using duck, but use whatever protein sounds good and fits your budget. You don’t need to make it all fancy shmancy, but sometimes, a pretty plate of dinner can really improve a rough day.
