#Hummus #RoastedGarlicHummus
I doubled this recipe but if you don’t need as much just half the recipe. 🙂
Ingredients:
2 15.5oz. cans garbanzo beans
1/2 c. fresh lemon juice (about 3 lemons)
1 1/2. Tbs. roasted garlic, minced
1 tsp. kosher salt
1 c. tahini
1 tsp. cumin
8-12 Tbs. ice cold water
Garnish:
1 Tbs. roasted garlic, minced
1 tsp. sesame seeds
1-2 Tbs. extra-virgin olive oil
Few sprinkles of paprika for color
Directions:
In food processor, add lemon juice, salt and garlic and blend on high until finely chopped and mixed well. Set aside for 10-20 minutes so garlic can mellow with lemon juice.
Add tahini to processor and blend until thick and creamy (around 45 seconds). Add 2 Tbs of water and keep blending until paste is light and fluffy.
Add cumin and garbanzo beans and keep adding water 1 Tbs. at a time while processor is running until hummus reaches desired consistency.
Garnish with minced roasted garlic, paprika, sesame seeds and olive oil.
Refrigerate.
