If you’re looking for a healthy soup that will warm you up on a cold day, then this recipe is for you! Made with beef and barley, this soup is full of flavour and will fill you up until lunchtime! Not to mention, it’s easy to make and will be ready in just a few minutes!
Ingredients
2 pounds beef chuck – cubed
3 tablespoons olive oil
1 medium onion – diced
3 cloves garlic minced
1 tbsp tomato paste
Half Lb fzn mix vegetables
6 cups low-sodium beef broth
3 springs rosemary
3 sprigs thyme
1 cup pearl barley
Paprika powder 1 tbsp
Bayleaf 2 pcs
Oregano 1 tbsp
Secret spice 1.5 tbsp
salt and pepper – to taste
Preparation
Cut beef and get browning in pot on high heat.
Searing beef will help with locking down those flavours.
Once beef is seared add chopped onion and cook till onion turns brown.
Add your garlic and cook for few minutes all together.
Add tomato paste and make sure tomato paste is cooked through.
Add barley and cook for 2 more minutes all together.
Add your beef broth and make sure your wash bottom of pot.That is all flavour of your soup.
Add your vegetables.
Cover and bring to gentle simmer.
Add your spices and cook on low till beef is soft.
Make sure to adjust seasoning and mix every few minutes so barley do not burn on bottom of pot.
