The menu for today’s Sunday dinner with Mom is My Grandmother’s Hungarian Goulash and Coconut Cream Pie! Serve with a tossed salad and dinner rolls!
Ingredients needed:
For the Goulash:
3 medium onions, chopped
2 medium carrots, chopped
2 medium green peppers, chopped
3 lbs. beef stew meat
¾ tsp salt, divided
¾ tsp pepper, divided
2 tbsp vegetable oil
1 ½ cups reduced sodium beef broth
3 tbsp paprika
2 tbsp tomato paste
1 tsp caraway seeds
1 clove garlic, minced
¼ tsp sugar
1 (16 ounce) package egg noodles
1 cup sour cream
For the Coconut pie:
1 deep dish frozen prepared pie crust, I used Marie Callender’s
1 box 3.4 ounce French vanilla pudding and pie filling
2 cups milk
1 tsp coconut extract
2 cups shredded coconut, divided
Whipped cream for topping to serve
