Ingredients and Cooking Method
Ingredients:
2 tbsp olive oil
1 onion (diced)
1 tbsp garlic paste
500g mutton mince
1 tsp hot chilli powder
1 tbsp ground cumin
1 tsp smoked paprika
2 tbsp tomato purée
1/2 tbsp salt (adjust to taste)
1/2 tsp black pepper
1 1/2 tins chopped tomatoes
2 tbsps Worcestershire sauce
2 cups water
2 tbsps chili con carne spice mix
2 cups kidney beans (boiled and drained)
2 mixed peppers (diced)
Small piece of dark chocolate
1 red or green chilli (thinly sliced)
Fresh coriander (for garnish)
Method
In a large frying pan, heat the oil and fry the onion for few minutes, now add garlic cook for few minutes
as well. Add the mince, break up and cook till brown in colour and almost dried. Add the chilli powder,
cumin, paprika, tomato puree plus salt and pepper and mix until well combined. Cook for another 4-5 minutes
until fragrant. Add tomatoes and mix well and cook for 5-7 minutes until the tomatoes start to break up
Now add Worcestershire sauce and mix well. Mix the spice sachet in water and add to the pan, mix well an
bring to the boil. Reduce to a simmer and cook covered for 45 minutes adding a little extra water if the
mixture gets too dry. Now add the kidney beans, mix peppers and chocolate and mix well, cover and cook
further for 10-15 minutes.
Once the chilli is cooked garnish with fresh chilli and coriander and serve with rice, soured cream and
grated cheese.Enjoy!!!!!
