Let me show you how to make my super crunchy PARMIGIANO ROAST POTATOES! #shorts
Ingredients (serves 4):
-750g baby potatoes
-extra virgin olive oil
-a pinch of salt
-a small bunch of fresh rosemary
-a pinch of smoked paprika
-a pinch of pepper
-a pinch of oregano
-50g Parmigiano cheese

First of all wash your potatoes with some cold water then boil them in some salted water for about 25 mins or until soft.

Drain your potatoes and let them cool down for about 15 mins. Place your potatoes into a bowl and season them with extra virgin olive oil (like there’s no tomorrow), a pinch of salt, fresh rosemary, paprika, pepper and oregano.

Place your potatoes on an oiled oven tray, then gently mashed them with the bottom of a glass. Bake in the oven for about 25 mins (220C/430F).

Sprinkle half of the grated Parmigiano on top of your potatoes, flip them on the other side and sprinkle the rest of the cheese. Bake for about 8/10 more mins or until super crunchy!

For a vegan recipe, simply avoid the cheese!
