Looking for a delicious healthy soup? This soup is so satisfying and satiating!
THE RECIPE:
***I prefer the milder heat but you can use regular spices to heat it up if that’s what you like.
***Peas are substitute for the red beans in this recipe but
can be omitted along with the wild rice. These 2 items along with the Coconut Aminos are not fully raw but lightly processed with heat.
2/3 head of cauliflower
stems from 2 heads of broccoli *optional (had it on hand and used it)
¼ sweet onion *optional
1 bag frozen peas
½ cup bloomed wild rice ***see footnotes for how to bloom rice
4 lg. Stalks celery diced
1 red bell pepper ***most recipes call for green bell peppers but they are not ripe and not advised to use for raw foodists
½ TB oregano, thyme, basil, & smoked paprika
1 tsp. Garlic powder
2 tsp. Onion powder
1 ½ tsp pink salt
¼ tsp pepper
2 TB coconut aminos
½ tsp liquid smoke
1 can organic tomato paste
3 roma tomatoes
5 cups water
1-2 avocado
¼ cup mushroom powder OR
1 oz. bag of dried Oyster mushrooms (make your own if you have a coffee grinder, using half of the dried oysters, break them up and grind to fine powder) ***see footnote for link on Amazon
INSTRUCTIONS:
In a small bowl, soak the other half of mushrooms while prepping the soup. You can use the soak water in the soup later.
In food processor, rice your cauliflower and broccoli stems. Add to a large mixing bowl. Dice onions, celery, bell peppers, & tomatoes and add to the bowl. Thaw one bag of frozen peas and add to bowl. Add your spices, aminos, and tomato paste and mix well. Add mushroom powder and water then stir until thoroughly mixed well.
Remove one cup of soup and put into a blender along with 1 small or half of a large avocado and blend until pureed. Add back to the soup mix and stir. Chop soaked mushrooms into small pieces and add to soup.
Dice the rest of your avocado and add to Jambalaya and stir. Makes approximately 12 cups.
You can eat this at room temperature or put in Dehydrator at 135 degrees for 1 ½ hours, stirring every 30 minutes. (I used a large stainless steel bowl for this and put it in dehydrator with a plate on top as a lid to warm it up.) You can also use glass or Pyrex bowls.
FOOTNOTES:
Place wild rice into a glass jar or bowl and cover with water and let sit overnight in a warm place. To speed this process, you can place in dehydrator on 100-105 degrees or set on top of refrigerator.
The next day, drain and rinse and add fresh water for about 2-3 days or until you see the white flesh on the rice and it is chewy. Drain, rinse, and add to your dish of choice.
