Craving Nandos? This is one of my best pasta dishes and it’s a crowd pleaser in my house. You’re going to make a sauce which will marinade the chicken and we’re going to use it as a sauce for the pasta.
Ingredients
Marinade
1 onion
1 red pepper
2 large red chillies
6 garlic cloves
1/2 tablespoon oregano
1/2 smoked paprika
Juice of 1 lemon and zest of half lemon
1 teaspoon sugar
2 teaspoon salt
1 teaspoon black pepper
3 tablespoon olive oil
To fry chicken
2 tablespoon oil
To make the meal
2 tablespoon butter
3 garlic cloves minced
1 teaspoon salt
1/2 cup pepper
200g penne pasta
Instructions
Blend together the ingredients for the marinade.
Marinade the chicken and leave to rest for an hour minimum.
On a pan fry the chicken with 2 tablespoon oil, will take around 10 minutes. Remaining will be cooked in the sauce.
On the same pan add two tablespoon butter then add your onions.
Saute for two minutes then add garlic. Onions should be soft.
Fry the garlic and onions until golden.
Add the chicken and peppers.
Cook for 3-4 minutes and add the sauce.
Heat the sauce up and add 1 cup pasta water.
Add 1/2 cup cream after sauce is hot.
Let that heat up for about 2 mins and then add your pasta.
Mix that all in, heat it up and then your finished.
Garnish with parsley and parmesan.
