EMPANADAS Ingredients
2 cups instant cornflour
1/2 tsp to 3/4 tsp salt
1 3/4 cup to 2 cups hot water
2 lbs bone-in chicken thighs
1 tsp seasoned salt
1/2 tsp lemon pepper
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground cumin
2 Roma tomatoes
1 large jalapeno
4 scallions
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp onion powder (optional)
1/4 tsp garlic powder (optional)
6 oz shredded cheese of your choice
cooking oil for frying
GREEN RICE Ingredients
1 poblano pepper (charred and cleaned)
5 oz baby spinach leaves
2 scallions
2 cloves of garlic
1 Tbsp chicken bouillon powder
2 cups of water
2 Tbsp cooking oil to toast the rice
1 cup long-grain rice (rinsed)
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
