FULL RECIPE
Ingredients
2 cups of lentils of your choice
1 cup of red kidney beans
2 cups of marinated sun dried tomatoes
1 cup of cooked, or raw oatmeal(use more when needed to bound ingredients better)
1 head of garlic
1 8oz box of mushrooms
1 big onion
1 small apple
1 small beet
Salt, peeper, and spices to taste( I used garlic, smoked paprika, rosemary, thyme, mixed picking,and sage)
2 tbsp. of olive oil to saute onions, mushrooms, and beet
Directions
Boil lentil until soft. Blend it with cooked beans( you may use beans from can if you want), sun dried tomatoes, and oatmeal. After you obtained a puree, ad an apple and garlic.
In the meantime , saute onions for a few minutes. Add mushrooms and saute for few more minutes again and add a shredded beet at the end of sauteing process. Combine with a previously made mixture and add spice, salt, and pepper.
Put the lentil mixture in a fridge for 1-2 hours for the sausages to bond better. Afterwards, create 3-5 inches logs to form sausages. Prepare parchment paper and foil( bit larger for the sausage to fit in). Place sausage on an edge of a parchment paper and roll it forwards until it is all covered with the paper. Twist both sides of the paper well and follow same steps with using foil. Put your sausages in a steamer, or boil water in a large pot and put a steaming basket to place sausages to steam-I used this method of steaming). Steam for 45 minutes and then place your sausages in the fridge( A consistency of the sausage is better when stays there longer).
Then it is time to bake your sausages in an oven-425F for 10 minutes each side, however, keep on checking your sausages to see if they must bake less , or more.
To marinade tomatoes I used olive oil, garlic, and dried basil. It is okay to use fresh basil in your marinade. Your marinade must be put in a fridge for some time( it tastes better if it stays longer there-I kept it in the fridge for 24 hours).
Tip
Mixed pickling spice includes a tiny pieces of bay leaves so you do not need any extra in your filling!
I created a gravy to go with my sausages and served it with mashed potatoes and cwikla( beets with horseradish mustard and spice).
If you would rather have your sausages fried, you can. Also you may grill them as well.
