This is a foolproof perfect lamb rack recipe using the reverse sear technique. For the holiday season or a special day, you want that perfect lamb rack to be on the table to share with your loved ones. On top of that, if you want something outside the box and use a special glaze to hype up the flavor game, this Korean BBQ style Gochujang glaze would be a perfect match. Here is all about the perfect lamb rack recipe that everybody will fall in love with.
Ingredients:
Lamb Rack 850g
Salt and Pepper Seasoning
Cumin 1 Tbsp
Smoked Paprika 1 Tbsp
Glaze
(Clarified) Butter 2 Tbsp
Gochujang, Korean Chili Paste 1 Tbsp
Sugar 1 Tbsp
Mirin 2 tsp
Soy Sauce 2 Tbsp
Gremolata
Mint 6 ea
Parsley 15 ea
Lemon Zest 1/2 Tbsp
Pistachio 16 ea
Lemon Juice 1 Tbsp
Salt taste
Garlic 1 ea
Olive Oil 2 Tbsp
Mustard Potatoes
Mini Potatoes 300g
Scallion, rounds 1 ea
Onion, small diced 1/4 ea
Whole Grain Mustard 2 Tbsp
Salt taste
(Clarified) Butter 2 Tbsp
Directions:
1. French the lamb rack as instructed in the video. Season with salt and pepper and apply cumin and smoked paprika. Leave it at room temperature for 3 hours.
2. Blanch the mini potatoes until they are soft enough to be pierced. Cool them and medium dice.
3. Cut onions into small dice and scallions into rounds.
4. For gremolata, roughly chop mint, parsley, pistachios, peel garlic and grind them in pestle and mortar with salt, lemon zest, lemon juice, and olive oil.
5. For the glaze mix all ingredients and gently heat and mix together. No need to cook the sauce and you need to just melt butter and the sugar.
6. In a preheated oven to 350°F (180°C) roast the lamb rack with the bones covered with aluminum foil for about 20 minutes and check. The target internal temperature is 115°F (46°C)
7. While the lamb is being roasted, cook potatoes with onion, scallions in clarified butter. Season and mix with 2 Tbsp of whole grain mustard.
8. When the lamb reaches the target temperature, sear all sides on a hot skillet with brushing the glaze on all sides, turning frequently without burning and apply multiple layers of glaze.
9. Slice and plate as demonstrated in the video.
