Ingredients needed :
* 2 lbs mutton
* curry powder
* goya
* adobo
* paprika
* curry powder
* black pepper
* salt
^ vegetable oil
* 1 irish potato
* 1 whole carrot
* half sweet onion
* half red bell pepper
* 2 scotch bonnet pepper
* pimento seeds
* escallion
* thyme
* garlic
* ginger
* lemon
First clean and wash the mutton with lemon, drain any excess water; then season with black pepper, pimento seeds, salt, onion, garlic, ginger adobo, paprika, curry powder and then allow to sit and marinate for 2 hours, even more as desired.
Once the marinating process is over, heat a sauce pan with oil and then add the mutton. Cook on low heat for 5-6 minutes on both sides until golden . After the sautéing process is complete, add water and boil until soft. you will need to top up with water every 30 minutes. The entire process will require 2-3 hours; if using a pressure cooker or crock pot it will take roughly 1 hour. Once the mutton is soft, add a second batch of seasonings as well as carrots and potatoes; allow to cook on low heat for an additional 15 minutes until the gravy is formed. Then enjoy!
