Buttery Lemon Chicken

This recipe is easy to prepare, delicious, and chances are you have everything at home already. It only takes about 30 minutes to make and you have dinner for the family. I use a Ninja Foodie but the Instant Pot works just as well.

Ingredients:
2 lbs. chicken breast or thighs – I prefer thighs
2 tbsp. ghee or butter – You can also use a good olive oil as well
1 onion diced – doesn’t much matter what kind
¾ cup natural chicken broth
4 cloves minced garlic
1 tsp. salt
½ tsp paprika – I use smoked because I like the smoky flavor
½ tsp pepper – fresh cracked is best
1 tsp. dried parsley
½ cup lemon juice (2 lemons) –
4 tsp. cornstarch mixed with 4 tsp. water

Steps:

1. Set the Instant Pot/Ninja Foodie to sear/sauté mode and get your butter/ghee/oil in there.
2. Add onion, garlic, paprika, parsley, and pepper and let spices bloom. This should take only 20 seconds or so. We don’t want to burn the spices.
3. Add minced onion and sauté until soft and translucent.
4. Add chicken and sear on both sides for about 3-5 minutes to develop a nice caramelized color on both sides.
5. Pour chicken brother, lemon juice, and salt over chicken and stir to incorporate all ingredients together.
6. Seal your device and make sure your pressure valve is set to closed. For a ninja foodie use pressure on high and for an instant pot use the poultry setting.
7. Set cook time to 7-8 mins for thawed or 12-15 minutes for frozen. Thawed is better though!
8. When timers is up, let pressure release naturally. This should take approx. 20-25 minutes.
9. Remove chicken but leave the sauce in the pan. Gradually stir in your thickener of choice. Cornstarch slurry for me.
10. Add pasta to thickened sauce if serving with pasta. Otherwise, pour sauce over chicken when plating for dinner!

I’m all about fast, easy meals, and this one fits the bill. There is definitely room for modification as well. Use regular butter or oil instead of the ghee. Substitute out the cornstarch for arrowroot flour with the same measurements. Use less lemon if you like less citrus flavor or try it with lime. Serve with pasta, white or brown rice, or in my case the dreaded cauliflower rice. Either way, let me know what you changed in the comments below because I want to know how to make this even better!
