Ingredients:
1 1/2 cup red or green lentils
3 cups water
1 tbsp. olive oil
1 small white or yellow onion (diced)
1 red or green bell pepper (diced)
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. brown sugar
2 tbsp. Worcestershire sauce
1 tbsp. garlic power
2 tsp. chili powder
2 tsp. ground cumin
2 tsp. smoked paprika
4 hamburger buns for serving
dill pickles, mustard, sliced onion, cheese- all optional for serving
Directions:
1. Rinse and drain lentils well in a metal strainer. Add 3 cups of water and lentils to a pot over medium heat and bring to a boil. Reduce heat and simmer lentils for 5 minutes (longer if using green lentils) just until al dente. They should still be slightly chewy as they will cook more when added to the sauce. Strain out excess water and set aside.
2. Preheat the oven to 450 degrees F to toast the buns.
3. Heat a large pan over medium heat. When hot, add oil, onion and bell pepper. Season with salt and pepper, stirring frequently until peppers and onions are tender and slightly browned.
4. When vegetables are done, add tomato sauce, cooked lentils, Worcestershire sauce, spice mix (including sugar), and stir to combine. Bring to a gentle simmer until warmed through and the sauce has thickened.
5. While mixture is cooking, spread butter/margarine or olive oil on buns and sprinkle with garlic powder. Place face up on a baking sheet and toast for 3-4 minutes.
6. Remove buns from oven and spoon mixture over top. Add toppings like pickles, mustard, cheese or sliced onion (all optional).
