So tasty, hearty, and SARAPlicious – this is our version of Callos recipe.

Callos is a hearty stew made of beef tripe, ox feet, chorizo, garbanzo beans, green peas, and bell peppers slow-cooked in a paprika-infused tomato sauce.

In our recipe, aside from the beef tripe and chorizo, I added Hungarian sausages and Loin Ham from our product sponsor, Super Sausages, to make it more flavorful. I want to taste that spiciness so I also put cayenne pepper into it. This dish is bursting with different kinds of flavors that I can’t help but eat more of it.

Include this in your holiday menu and you will all love it!

Ingredients:
* 500g beef tripe, washed and cleaned
* 150g loin ham, cut into squares
* 1 pc Hungarian sausage, sliced diagonally
* 2 pcs chorizo, sliced
* 8 garlic cloves, minced
* 1 medium onion, chopped
* 2 thumb-size ginger, julienned
* 2 bell peppers, sliced
* 1 beef cube
* 1/2 tsp salt
* 1/2 tsp ground black pepper
* 1 tsp Spanish paprika
* 1/2 tsp cayenne pepper (optional)
* 100g pitted green olives
* 1 small can of garbanzos
* 1 pack tomato paste (70g)
* 1 250g tomato sauce
* beef stock (from cooking the beef tripe)
* olive oil
* For cooking the beef tripe – water, bay leaves, ginger, and whole black peppercorns

Procedure:
1. To clean the beef tripe – rub with salt and vinegar and massage thoroughly. Afterward, wash it well in running water and drain.
2. Cook using a pressure cooker – add water, bay leaves, ginger, and black peppercorns – for 45 minutes. Let it cool and set it aside.
3. In another pot, heat olive oil. Sauté onions, garlic, and ginger.
4. Add chorizo, ham, and sausages. Mix well.
5. Combine the beef tripe. Add tomato paste (mixed with 3-4 Tbsp of beef stock). Mix well and cover.
6. Pour beef stock. Add a beef cube and ground black pepper. Stir. Cover and simmer.
7. Add the tomato sauce. Stir. Put cayenne pepper and Spanish paprika. Blend well. Cover and simmer.
8. Add salt, sugar, and the bell peppers.
9. Lastly, add the pitted olives and garbanzos. Taste and adjust if needed.
10. When the sauce has thickened, turn off the heat.
11. Transfer to a serving bowl. Eat with steamed rice or sourdough bread. Enjoy!
