Vegan Kale Greens:
Ingredients:
1 ONION
1 TBS OLIVE OIL
2 CUPS VEGGIE BROTH
3 TBS RED PEPPER FLAKES
SALT AND PEPPER
32 oz KALE GREENS
( optional: 1 TBS smoked paprika)
1. Heat oil. Sauté onion until translucent.
2. Add vegetable broth. Let broth begin to boil
3. Add seasoning.
4. Add washed greens.
5. Cook greens until tender.
6. Add more seasoning as desired.
Vegan butternut squash Mac n cheese:
Ingredients:
2 TABLESPOONS VEGAN BUTTER
2 CUPS OF BUTTERNUT SQUASH
1 CUP RAW CASHEWS
1 TBS NUTRITIONAL YEAST
1 TSP SMOKED PAPRIKA
SALT + PEPPER
1 FLAX EGG
1/2 WATER FROM NOODLES
12 OZ NOODLES
1. Soak cashews overnight or boil for 15-20 min.
2. Cut/peel butternut squash. Cut into small pieces. Bake on 350 degrees F for 25 min or until tender.
3. Cook noodles as outline on box.
4. Add squash into food processor. Process until smooth.
5. Add cashews into food processor. Process until smooth.
6. Add remaining ingredients, process until you obtain a smoothie cheesy texture.
7. Add cheese sauce to noodles.
8. Bake on 350 F for approximately 20-25 min
9. Optional: Add toasted breadcrumbs and parsley as topping
