Mediterranean Style Eggs with Mushrooms & Onions
Ingredients:
– 3 tbsp. olive oil
– 2 tbsp. butter
– 2 cups sliced mushrooms
– 1 cup sliced red onions
– 1/2 cup green onions
– 1 cup green peppers
– 1/2 cup red peppers
– 1 tsp. paprika
– 1/2 tsp. turmeric
– Salt & pepper to taste
Recipe:
1. Heat olive oil and butter in a pan on medium heat.
2. Add the red onions and cook until tender.
3. Add mushrooms, green peppers, red peppers and cook for 2-3 minutes or until the mushrooms are cooked very well.
4. Then add the green onions and cook for a minute.
5. Once done, add 4 eggs and the paprika, turmeric, salt and pepper. Cook for 5 minutes.
6. Touch up with some parsley.
