-EASY WAY TO COOK KANTO STYLE FRIED CHICKEN
Prep time: 15 minutes (excl. marinating overnight)
Cook time: 30-45 minutes
Total time: 1 hour (maximum)
Servings: 3-4 people
Ingredients:
1 kilo whole chicken (cut in to pieces)
1 lemon (squeezed)
4 cloves of minced garlic
2 teaspoon sesame oil
1 teaspoon fish sauce
2 teaspoon paprika
1 egg (white only)
3 cups of corn flour
1/2 cup vinegar
cooking oil
Salt and pepper to taste
Instructions:
Pat dry chicken using paper towel after washing it. To marinate, add in lemon juice, garlic, fish sauce, paprika, sesame oil, salt and pepper. Mix everything until combined. Cover with cling wrap, then keep in the fridge overnight. The next day, take it out from the fridge, add in the egg white and mix. Put the corn flour and mix again until combine and the chicken looks almost dusty (when you shake off a piece, there are no wet parts on it) with flour. Add some more flour if necessary. To fry, heat oil in a deep pan, then deep fry the chicken. Turn once golden brown and set aside. Bring back the cooked chicken for second frying. Strain the excess oil. Enjoy it while hot.
