This juicy Turkey roast and brine recipe is an ideal meal for Parties, family gathering Or Special Occasions. This is very easy to follow step by step recipe. With wet brine, your turkey will be very juicy, moist and delicious that your family will love.

Brining means making a salt water solution and submerging the turkey for about 24 to 48 hours before roasting. It helps the turkey retain more moisture during roasting and prevents it from drying out.

How to make Brine Recipe Ingredients:

• 1 gallon warm water (more as needed)
• 3/4 cup salt
• 1/2 cup sugar
• 1 large onion (cut in halves)
• 2 tablespoon whole peppercorns
• 15 – 20 garlic cloves, peeled and smashed
• 3 – 4 whole bay leaves
• 1 – 2 Cinnamon sticks
• 1 tsp. Cloves
• 2 cups apple cider juice or apple juice
• 4 tbsp. fresh rosemary leaves
• 1 tablespoon fresh thyme
• 3 Lemons
• Peel of three large oranges (Optional)

Method: Combine all ingredients in a large pot. Stir until salt and sugar dissolve in warm water.
Lower the turkey in the brine. Add additional water to make sure the brine covers the turkey entirely, so you don’t have to flip in. Determined brine-time based on the size of your turkey. Mine was 10 pounds. I Brine it for 24 hours.

• Before you roast the turkey, take it out of the brine water and place on a rack to dry at least couple of hours. Use paper towels to pat the turkey dry if needed.

Turkey Roast recipe:

Butter mixture Ingredients:
• 2 sticks Butter
• 1 tsp. garlic powder,
• 1/2 tsp salt
• 1 tsp. onion powder
• 1 tsp. white pepper
• 1 tsp. black pepper
• 1 tsp. paprika or red chili powder

Stuff the cavity:
• 1/2 tsp black pepper
• 1/2 tsp. Thyme
• pinch of salt
• quartered onion
• halved lemon
• 10 garlic cloves
• Fresh bunch of thyme
• Fresh bunch of rosemary

Method: Preheat the oven to 350 degrees F.
Rub the turkey skin all over with butter. This helps create that perfect golden exterior. Roast the turkey at a low temperature for 15 minutes per pound.

• After 25 minutes in oven,
• Pour 1 cup water (Optional add cider or chicken stock) in the bottom of a pan.
• Then, baste with butter.
• Note: Baste every 15-20 minutes with Butter.
• reserve the turkey drippings for gravy.

Approximate times:
10 pound | 5kg: 2 hrs 15 min
12 pound | 6 kg: 2 hrs 35-45 minutes
14 pound | 7 kg: 3 hrs
16 pound | 8 kg: 3 hrs 15-20 min
18 pound | 9 kg: 3 hrs 45-55 min
20 pound | 10 kg: 4 hrs 15-20 min
Note: This is just an estimate.
Insert your meat thermometer between the breast and leg. It should read 165°F.
