Stuffed Chicken Roast | Stuffed Chicken Roast Indian Style | East Indian Chicken Roast
We have used a small chicken of about 1.2 Kgs to make it easy for beginners. A smaller bird is easier to handle and bake.

INGREDIENTS FOR THE STUFFING (1.2 KG WHOLE CHICKEN)
1 tbsp Cashew Nuts or any nuts of your choice
1 tbsp Raisins
Bread Croutons – 2 slices of bread cubed and shallow fried
Onions – 2 medium chopped
Green chillies – 4 chopped
Ginger – 1-inch piece chopped
Carrot – 1 small cubed and blanched
Green peas – 1/2 cup blanched
Chicken liver – 1/2 cup (boiled and cubed) (I skipped this time)
Cold cuts (optional)
Juice of half a lemon
Coriander leaves
Garam Masala Powder – 1/2 tsp (*see video)
Pepper Powder – 1/2 tsp
Salt – 1 tsp
Ghee or Oil – 1.5 tbsp (ghee preferred)
1.Pat the chicken dry and marinate with salt, paprika, or chilli powder and lemon juice.
2. Prepare the stuffing and stuff the chicken with it.
3. Bake in a pre-heated oven at 180 deg C for 1 hour 10 minutes. (pl note that baking time would differ depending on your oven and the chicken)
4. It always takes me 1:10 or 1:15 minutes to bake a small chicken at 180 deg C in a microwave convection oven.
5. Use chicken with skin on.
