Creamy Spicy, Cheesy, Southern Grits Recipe (2 servings)
Ingredients:
1/2 Cup Papa Tom’s Stone Ground Yellow Grits
1 Cup Whole Milk
2/3 Cup Water
2 Tbsp Butter
1/2 Cup Shredded Cheese (I used a spicier Mexican Blend)
Salt to Taste
Seasonings to taste (I used Garlic Powder, Smoked Paprika, and Papa Tomβs Louisiana Seasoning Mix)
Directions:
Add milk, water, salt, and seasonings to a 6 qt pot. Set heat to medium-high and bring to a boil.
When it begins to boil, add the grits and whisk to prevent lumping. Reduce heat to medium-low, cover the pot, and simmer for 12 – 15 minutes, whisking occasionally to prevent sticking.
Test to ensure that the grits are soft. If too thick, add some water or milk, if too thin, remove the cover and let simmer until desired consistency is reached.
When soft enough, add the butter and cheese and continue to simmer. Let them melt, then whisk to thoroughly combine. Taste and adjust seasonings as needed.
Serve as it’s own dish, or serve as a side dish to any meal.
