The potjiekos, or shortened to a potjie (Potjie = small pot, kos = food) is a traditional one pot meal, cooked here in South Africa over the open fire in a traditional potjie pot that is a descendant of the Dutch oven, with 3 legs. More stew like and smokey in taste than a traditional Indian curry, this is my son Pritesh’s recipe for the perfect spicy lamb potjie.
You will need:
3kg of lamb, cut and washed
2 green peppers
4 carrots
8 medium potatoes
1 tray of brown mushrooms
3 onions, roughly chopped
5 dried chillies
4 tomatoes chopped
8 cloves of garlic
500g dubla (double beans)
1 tbsp BBQ spice
2 tbsp crushed ginger and galric
1 tsp ground black pepper
Cinnamon sticks
Bay Leaves
1 tsp Garam masala
1 tsp chillie powder
1 tsp smoked paprika
1 tbsp jeera
Star anise
1 cup of stock (vegetable or meat stock)
Salt to taste dependent on the stock
Fresh thyme
Dhania to garnish
