Home time has been great
I prepared a fabulous meal for my family and it almost time to ride again 🚚💨💨

🔴Recipe

Season to your perfection
5 plum tomatoes
2 red bell peppers
3 roasted red pepper or fresh
1 large red onion
2 red habaneros (with seeds it will be extremely hot)* I recommend that you remove seed
6 or more cloves of garlic
I love garlic
1/2 stack of fresh parsley
1/2 stack of fresh cilantro
1 bag of dried tomatoes
Table spoon of salt, black pepper, rosemary, thyme and sugar, basil, oregano ( fresh or dry)
Teaspoon paprika, curry powder
2 cubes of chicken bouillon ( Maggie2 bay leaves
1 scallion
Blend all the above
Boil a whole chicken or
6/10 Pack of Turkey wings or
Pack of Beef
*Meat of your choice for the family
After boil until tender put broth to the side
Place meat in a rice strainer or napkins to dry
Take a pot of your choice
Fry boiled dried meat in oil
Until Golden brown
🔴place meat to the side and in the same grease
Add 6 cloves garlic fry in grease until toasted
Add and fry 1/2 onion in same oil
Add and fry Thumb size piece of fresh ginger or tablespoon of dry ginger ( use ginger at your discretion)
Add 12 ounces can of tomato paste to oil as well and fry until you see a beautiful royal red oil and your home is dented with this great
smell
🔴Continuous stirring is required until you get it to a the great royal red color
Add red pepper mix ( the blend at the beginning of recipe)
Give it a stir turn temp down to low and allow all the stew to cook down to your desired consistency
🔴At this point it up to you , you can use all the sauce or you can save some for a great pot of spaghetti or a nice pot of jollof rice
Add a cup or two of the broth (from the meat boiled )along with 1or two bullion cubes
Allow flavor to infuse
After infusion taste to see if you need to add salt
I added 1/4 cup of sugar ( optional)
Place dry fried meat in mixture and allow meat to soak in the great flavors
Make a nice pot of white rice of you choice
I use Balsamic or Jasmine Rice
Serve over rice
With your fried plantain
I love to serve with hatian cabbage ( pikliz) or a nice pot of greens
