A Tex-Mex meal inspired by our stay in Houston, Texas…due to my husband’s work posting.
Ingredients
For the guacamole
1/2 red onion (around 2 tbsp)
6 medium sized avocadoes
1 tbsp finely chopped coriander
2 tbsp finely chopped tomatoes
Juice of half a lime
Salt + pepper to season
(You can increase or decrease quantities to your tastes)
For the salsa
5 sliced salad tomatoes
1/2 white onion
2 tsp finely chopped coriander
1 tbsp red jalapenos
1/2 tsp paprika
1/2 tsp chilli powder (in the video we have written curry powder in error – sorry)
Juice of half a lime
Salt + pepper to season
(You can increase or decrease quantities to your tastes)
For the taco mince
1/2 red and 1/2 white onion
500g beef mince (10-15% fat)
Old El Paso taco mix (or use cumin, paprika and chilli powder)
For the wrap
Small soft wheat tortilla wraps (buy from any supermarket)
Grated cheese (we use cheddar, but any hard cheese is adequate)
Chopped tomatoes
Green fresh salad
Coriander to garnish
