In this video I show y’all how to make a delicious Cajun shrimp sausage and potato skillet dish. Wild caught shrimp, smoked sausage and cubed potatoes Cajun seasoned and cooked in a skillet for an easy, quick and spicy meal.
Shopping List:
1 large Yukon Gold potato, skinned
1 cup small frozen raw shrimp, peeled, deveined, tail off)
1 pre-cooked smoked sausage link such as Eckrich.
1/2 cup green onion
1 tsp. minced garlic
Seasonings to taste:
Kosher salt
Course black pepper
Garlic powder
Onion powder
Smoked paprika
Cayenne pepper
Cooking oil
Hot sauce parsley for garnish
Directions:
Skin potatoes, cut into about 1 inch cubes, rinse well and pat dry. Add to a bowl and season to your taste with the seasonings except for the Old Bay (for the shrimp). Sprinkle with a light amount of oil and toss. Fry in a skillet with a small amount of oil until lightly seared and are fork tender. When done move them to one side of the skillet and add saute the minced garlic for about 30-45 seconds until fragrant then mix with the taters.
Cut the pre-cooked smoked sausage into about 1/4 inch rounds. Sear in a skillet with a small amount of oil and cook until seared and warmed through. Add to the taters.
Thaw the shrimp in a bowl of cool water for about 10 minutes. Lay on paper towels and pat dry. In a skillet with a small amount of oil over medium heat cook for about 2-3 minutes on each side. The shrimp will turn opaque and slightly pink with done. When done, season to taste with Old Bay seasoning and toss.
Add to the skillet with the taters, sausage and garlic. Add the green onion and toss. Garnish with a sprinkle of your favorite hot sauce and roughly chopped parsley.
Serve with your choice of rice.
